Fabulous Fish Pie

Fabulous Fish Pie

I actually use Heinz soups in quite a few of my recipes ... but on a cold winters night this is one of my favourites:-

5lbs of potatoes
Generous knob of butter
Hefty splash of milk

Knob of butter
Splash of oil
Punnet of button mushrooms sliced
Large onion sliced
Packet of fresh prawns (200g)
Fillet of cod
Fillet of smoked haddock
Fillet of salmon
Packet of smoked mackerel fillets
Handful of minted peas
Hefty handful of florets of broccoli
Hefty handful of florets of cauliflower
1/3 pt Milk

Peel and chop the potatoes,
Place in a large pan and fill over with water and put on the boil

Steam the broccoli, cauliflower and peas (in a steamer or microwave)

Chop the onion finely and place in a pan with the mushrooms, butter and oil and soften over a low heat. Once softened add a can of Heinz mushroom soup and approx 1/3 pt of milk. Remove from heat.

Once steamed until softer, but not falling apart (approx 10 minutes on the boil) distribute across the bottom of a large open pie dish.

scatter the prawns on the top and once skinned and boned, cut the fish into chunks and distribute on top.

Cover the fish and veggies with the soupy sauce.

Once boiled soft, drain and mash the spuds with butter and milk. Spoon over the top of the fish/veg base and flatten with a fork.

Place into the centre of the oven and cook at approx 170deg C for an hour.

Remove from the oven and ENJOY!

Sounds delicious! I like the idea of adding vegetables to the pie to make the expensive fish go a bit further, as well as adding taste and nutrition.
