Black Garlic

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Following the discussions on smoked garlic, I noticed some black garlic the other day. Has anyone tried it?

Yes Liz I've bought this a couple of times from the black garlic website. There are recipes on the site to give you ideas for it's use. I've put it in beef stews ect. & think it enhances the glarlicky flavour, but have a go & see what you make of it. Gave a bulb to my niece to try & she liked it. xx

Shall give it a go, it supposedly doesn't make your breath smell like ordinary garlic does - I guess I'll find out if it's true.

Do report back and let us know Liz. OH loves garlic. I loathe it! A low smell version would improve my life immeasurably!!!

Update on black garlic

Well, I tried it yesterday when I did lamb shanks and I was impressed. Lovely garlicy flavour but more subtle (I used three cloves). Will definitely use it again in all sorts of ways. Oh, I don't have garlic breath!

Black Garlic

I bought some off Amazon, and it is delicious. I am just snacking on it at work. I don't know if it's the same as the stuff you people bought. Its soft, sweet and subtly garlicy with a slight pleasant bitter after taste. A sort of liquorice texture.

Excellent product, I use it a lot now. Haven't stopped using "normal" garlic but sometimes a change is grand.
