Picnic Pies

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Picnic Pies

In today's recipe Delia shares her old-fashioned raised pork pies and on her picnic suggestions she shares also a recipe for chicken & herb pies. Both recipes use hot-water crust pastry but the psstry for chicken pies calls for 2 fl oz water to be added whilst the pork recipe only uses 1fl oz, otherwise the ingredients are exactly the same. Is there an error on either one or a reason why you should double the water content in the pastry for the chicken pies? Any replies would be appreciated.

Totally agree, welshcookie. Anyway, flours vary a bit in the amount of water they absorb. One goes by feel.
