Liquid Glucose

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Liquid Glucose

Please help! I live in California and cannot find liquid glucose. Does anyone have any suggestions for a substitute?

Liquid Glucose sub.

I think you will get away with using light corn syrup as a substitute for the liquid glucose. I have David Lebovitz book 'The Perfect Scoop' and he says in there that bakers outside of the US should sub. liquid glucose for lt. corn syrup so I suppose it works the other way around!

"For anyone who can't obtain the Glucose Syrup use:-
5 TBSP of water
5 TBSP of Caster Sugar
Microwave on medium until the sugar dissolves allow to cool slightly then use as Glucose Syrup, the results are just the same and will keep in a small bottle if you don't use it all, but to be honest it is so simple there is really no need to keep it, just make fresh each time you need it"

Yes, 'twas I Sonya, works just as well, and saves a trip to the shop/chemist for it :)
