Cherries and Cherry Jam

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Cherries and Cherry Jam

We are inundated with cherries and I would like to make some jam and freeze some others.
The problem is that a lot of them have started to split - probably due to the hot weather. Would it matter if I use these in the jam? They are perfectly good, not rotten or mouldy, just split skins and I didn't think it would matter, but thought I'd check.
With regards to the freezing, I presume I shouldn't use the split ones, only those with prefect skin?

Safe to use.

Split cherries are safe to use , no problem there.
They will split when you cook them.
As for freezing cherries, again there should be no problem as long as the fruit is not gone soft or rotten.

Cherry Jam

Thanks, I took a risk and made some jam anyway, it looks OK!
We have some white cherries as well as red and the white cherry jam has set better so I might have to re-boil the red.
