Cake tin sizes

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Cake tin sizes

I need to make two rich fruit cakes for a wedding. The tins I have are 8" and 6". Delia's conversion table
gives quantities for 7" and 5"
tins. Would it make any difference if I used larger tins?

Only that the cakes will be slightly shallower if you use a larger tin.

The ingredients for an 8 inch square tin are 3rd down on the list given on the cake scaling page.

I'd scale up the ingredients for the 6 inch square tin to avoid a shallow cake. Scaling is approx 1.5 times 5 inch recipe.
