Wheat Allergy!!

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Wheat Allergy!

It depends! Always check labels of anything pre-prepared for "Modified Starch". Unless specified, this can be wheat starch. You are looking for corn or potato starch.

Also Soy sauce can be a problem. More and more you will find that sauces etc are marked "Gluten Free" and "Suitable for Coeliacs"

Wheat Allergy!!

I checked Lea and Perrins and the ingredients are:

Malt Vinegar (from Barley), Spirit Vinegar, Molasses, Sugar, Salt, Anchovies, Tamarind Extract, Onions, Garlic, Spice, Flavouring

It does not contain wheat, but it does contain barley so would not be suitable for someone who is diagnosed coeliac. It is probably fine for someone with a self diagnosed wheat intolerance.

What you will find is you really need to be checking what is in the product - laborious at first but necessary.

As previously pointed out, some items maybe be suitable for someone with a wheat allergy or intolerance but not for someone who cannot have wheat, barley, gluten, oats or rye (coeliacs cannot have any of these).

You will be able to find products in health shops and specialised online stores who offer perfectly good alternatives. I would strongly recommend you have a look at some websites like Coeliac UK - who in turn can point you towards other good links.

I dont have a problem with soy sauce as I use a gluten and wheat free one called Tamari. Most products which are gluten/wheat free should be clearly labelled as such.

Wheat Allergy!!

Thanks to all of you again, today I made a cottage pie & I'm now a bit concerned re the worcestershire sauce which I added! Girls I should have been referring to Google before now! I will watch out for the type of starch in the ingredients in future. My problem is I will have to go to the supermarket armed with a magnifying glass I think, even though I wear specs!!! Thank-you M

i have a wheat allergy and do not use the popular brand of the sauce,but, you can buy a gluten free version from sainsbuury and tesco i think it is a brand called tiger.............

just to let u know that i get a kikkoman that is gluten free and it is from the chinese supermarket.they seem to be realising that there is an issue in china now.........

Thank you Mr Cool A I will certainly look out for the Kikkoman & the Tiger sauces when in Tesco. We don't have much choice of supermarkets up where we live as yet. Hopefully I'll get them in our local Tesco. Always amazed at the help we all get on this forum. Thanks to you all again. M

Wheat Allergy!! Pancakes

Had WONDERFUL GF pancakes on Tuesday.

5 oz GF plain flour
2 eggs
1 tbsp oil
1/2 pt milk.

Whizz together, rest (very important) and cook. Very thin and delicate and no discernable taste difference.

Batter seems very thin but cooks well. And tosses!

Cool....good to know. i manage quite well generally just converting normal recipes to to GF flour, some times they fail but more often than not they work....i have a ghood Pizza dough recipes, they look a bit pasty but work well especially if you have a stone.
1/2 cup Gluten Free All Purpose Flour Mix
&"188; cup Maize meal/polenta
3/4 cup tapioca flour
2 tablespoons dry buttermilk powder OR dry powdered milk OR Vance's Dari-Free Powder
1 teaspoon unflavoured gelatine powder (2 sheet )
1 teaspoon salt
2 teaspoons xanthan gum
1 package active dry yeast granules
1 teaspoons sugar OR 1/2 teaspoon honey OR agave nectar
2 teaspoons olive oil
1 1/2 teaspoons cider vinegar
1/2 cup lukewarm water (hot water will kill the yeast!)
Extra tapioca flour for rolling the pizza dough
Gluten Free cornmeal to sprinkle on baking sheet

1. Place all dry ingredients in a large mixing bowl and whisk until thoroughly mixed together.
2. Add sugar , vinegar, olive oil and gradually add water.
3. Mix on high speed for 3 to 4 minutes.
4. Scrape the thick dough on to a large clean surface liberally sprinkled with tapioca flour.
5. Work enough tapioca flour into the dough so that it can be shaped into a large ball. With a large knife cut the dough in half to make two medium pizzas.

The key to shaping this dough is to continue to sprinkle the work surface and the dough with tapioca flour.
6. Shape each piece into a circle making sure to sprinkle enough tapioca flour on the dough and the work surface to prevent it from sticking.
7. With a rolling pin shape the dough into circles. Roll thin for New York style pizzas or thick for Chicago deep dish style.
8. If you want carefully place one prepared pizza crust on baking sheet or pizza stone sprinkled with corn meal and bake for about 5 minutes or until the dough is firm. This is called parbaking. Repeat with second pizza or just top and bake
9. Top pizzas with your favorite ingredients and bake an additional 7-10 minutes or until done. Or cool parbaked crusts, wrap and freeze for convenience.

GF Pancakes

These also open the way up for baked stuffed pancakes, filled with whatever you like, vegetarian or carnivore, with cheese or tomato sauces.

A great supper or lunch dish and preparable in advance - always an advantage.
