Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Please....Can anyone tell me why you split the vanilla pod if you don't need the seeds for flavouring anything else.

Because there is more flavour in the insides of the pod than the dry outside.
