Braised lamb with flageolet beans

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Braised lamb with flageolet beans

I want to try the braised lamb with flageolet beans, but cannot find the dried beans anywhere.

Does anyone know where you can buy dried flageolet beans?

Are tinned ones ok? as I assume you can use them in the same way, jsut that they are already pre-soaked.

Not sure they will be as good though, so what alternative do you suggest for the dried flageolet beans instead.

Z, your profile doesn't say where you live. I've bought them in Waitrose and in whole food shops. They're fairly small and pale green with flecks but lose much colour when cooked. I'd use any beans you like. Probably not red kidney beans, though, in this recipe.

Flageolet beans

Waitrose sell them and often whole food shops. I find the canned ones are very good. They are already cooked, so I tend to add them at the last minute so they don't break up.

Haricot beans are similar. Have you tried rinsing the tomato sauce off baked beans and using those? Or is that sacrilage?

Z, I asked the same question before Christmas and found them in Waitrose. I didn't notice any real difference in using them compared with tinned beans which I add with the tomatoes for the last stage of cooking, rather than at the beginning.

i made this yesterday and used Lima beans - was very nice!
