16" Rich Fruit Cake

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

16" Rich Fruit Cake

I am using Delia's Rich Fruit Cake recipe to make my son 's wedding cake. I have worked out the ingreidents I need for the larger sized cake but can anyone tell me how long I should cook it for?

May I counsel caution. 16" is vast. Think how large the fondant icing sheet will be. Can you handle that? How many is it for? Two cakes are so much easier to handle, cook, decorate and store. Most scaling up recipes usually go up to 12"; that is for a reason.

It is difficult to cook such a big cake because the outside will dry out before the middle is cooked.

If you need to serve many people is is easier to do one cake all decorated and a slab of cake with just marzipan and icing for cutting up off-stage.

I agree 16" is enormous. You must have a large square oven or a catering one. The largest I have made is a 14" and that was a mammoth task. I agree that two cakes would be easier. Good Luck , i hope you are successful.
