Blood Orange Marmalade

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Blood Orange Marmalade

I have got some lovely blood oranges - any ideas if the Traditional Seville Orange Marmalade recipe is going to work for them? I have to reduce the sugar content, that is for sure, as they are rather sweet and VERY juicy, but will I be able to keep the ruby colour of the marmalade if I follow this recipe? Would be very greatful for any ideas.

If you reduce the sugar content the marmalade won't keep as well.

Lemons

Blood oranges work well if you use 1/3 lemons to 2/3 oranges.
Try to keep the high ratio of sugar else the marmalade will not store

Added a bit of lemon juice. The oranges were so juicy that I have not used any water at all!! The finished product did lose a bit of colour - which was my main worry - but tastes divine...
