Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

what else can you do with them?

am planning my veggie plot for this year, and just wondering if i happen to get a bumper crop, what i can do with them, as i am sure they are an underestimated veg.

Delia has a brilliant How to Cheat recipe with aubergines - Melanza Parmagiana (not sure of spelling there ), its wonderful.

Nigella also does a few good Involtini recipes - slices of griddled aubergine stuffed with bulgar wheat/herbs/feta cheese and topped with a tomato sauce. Let me know if you need a specific recipe and I can send it to you.

Bolero has come up with some great ideas too.

I love optimists. I class them as a 'difficult' plant to grow, and they seem prone to everything - mildew, slugs and snails, aphids, the cold, non-fertilization. You name it, they get it.

I know loads of better gardeners than I will tell of their aubergine successes, but don't count your egg plants 'til you have them in the basket.

Yes, I grew them once in a hot summer. I was kept busy watering and tending. The plants flourished.The neighbours admired them. There were lots of aubergines thereon. The only problem was that not one of them grew larger than a pea!

That was in a year when the tomatoes ran mad. Huge Marmande ones by the dozen on only 4 plants! The neighbours started to avoid me if I was carrying a bag that looked as though it had tomatoes in it!

Nausea, your post made me laugh. 2010 was the year of the apple glut. Marrow/courgettes always overdo it too. And runner beans.

You really need a warm sunny greenhouse to grow these successfully. To maximise the size of the fruit pick off any excess as they set, limiting the plant to about 3.

thanks for some inspiring recipes.

and also the handy hints on growing.

i have tried them before, someone here sent me some seeds - they were the most unusual looking augergines i ever saw, they where stripey, and looked more like a chilli pepper. the leaves had thorns on.

i didn;t actually get to eat any of them, as we went away and my waterer person didn't water my garden very well, while we were away (now off christmas card list).

but i would like to give them another go.


I do like the sound of the nigella recipe, among many others - i knew they were under valued, so thanks ever so much.

Last year but one I put four plants in the greenhouse and after much TLC I only got 3 fruits - but they were lovely.
On a slightly different tack - is there anybody else out there who does NOT salt aubergines [or courgettes] prior to cooking? What would be your main reason for doing so and is it really worth the effort?

It is to draw out the bitter juices.

Modern varieties of aubergine are less bitter so arguably there is less need to salt them. Personally I never do, as I pre cook them in the microwave for moussaka etc. which draws out the juice without salt. I do this as I can't stand under cooked aubergine, and I'm not a fan of fried anything.

I have never heard of salting courgettes in advance of cooking.

ES - I agree about not salting aubergines (eggplants, over here) and if I make ratatouille I just chop them up and let them cook in the tomato juice.
For moussaka I hate frying them, too - like blotting paper with the oil!! How do you do them in the MW, as that sounds like a good alternative??
I've never heard of salting courgettes (zucchini) either.

I just slice them up, stack the slices on a dish, cover in cling film and cook until as soft as I want them. Then it is just a case of layering them in the moussaka and oven cooking as usual. Some people like the rich oily flavour of fried aubergine so wouldn't like this method, but I prefer it, and it also ensures that I never ever bite into a squeaky underdone slice. Pet hate of mine!
