Quark/Creme Fraiche

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

I suppose it depends what you're using it in. Low-fat cream cheese? Thick yoghurt? Single cream? Fromage frais?

You can pobably get quark but under a different name (google and look at the Wiki info). Alternatively you could use curd cheese or fromage frais.

Failing all else buy or make some plain yoghourt. Line a sieve or colander with a piece of muslin (or a clean new J-Cloth if desperate). Tip the yogourt into it and leave to drip until the whey has drained out (usually overnight). The remaining curds can be used for anything needing quark or curd cheese or you can even use it as a substitute for paneer in Indian recipes.

In Germany and other places quark often comes in various "strengths" (ie fat content) so you could choose your "strength" of yoghourt according to your requirements. If using Easiyo I usually use the Greek varieties either low fat or ordinary.

I've used the yoghourt method for cheesecakes and other things with no problems at all.

i can usually find Quark in the supermarket alongside the soft cheeses in the chiller in the deli section. Superstore and Co-op sell it in AB

for Creme Fraiche i use 50/50 sour cream and heavy cream mixed - works a treat

i heard a vicious rumour that Greek Yoghurt was making it's way to our shores - it's going to be the next big thing apparently (!) so keep 'em peeled....

Delia's use of creme fraiche

Does anyone know the year when Delia first used creme fraiche? I'm sure it was on her programme looking at her cooking history last year on the BBC but can't find the year anywhere online! Can anyone help please?

Delia and Creme fraiche

Delia seemed to be the first tv cook who used creme fraiche and that was way back when she did Summer Collection. Its a lighter version of cream and she uses this a lot. Having said that, I`ve three quarters of a large carton in the fridge - what to use it in??
