Christmas Chutney

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Christmas Chutney

I made Delias Christmas Chutney for the first time about 6 weeks ago. I was intending to give as gifts but when I have retrieved it from the garage it appears to be quite dry. I think I may of overcooked it. Can it be rescued by adding some sort of liquid to soften the consistency? Can anyone help?

If it is too dry, you might consider decanting it and bringing it to the boil again with something like port, or ginger wine to loosen it a bit, then re-bottle, after washing and sterilising the jars again. Both of these are quite sweet and have a rounded flavour, I think vinegar would be too tart.

Maybe try a small quantity first.
