Pasteurised Cream

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Pasteurised Cream

I have a recipe which calls for ‘gently’ pasteurised cream, rather than ‘ultra’ pasteurised. How on earth can you tell…or is it actually possible to tell? Most cream simply says ‘pasteurised’!

I'd go for the standard pasteurised cream found in the chiller cabinet myself. The ultra kind referred to is probably ultra heat treated (UHT) which tastes quite different.

Thanks - I hadn't thought of them using the term 'ultra' in connection with 'UHT'!

Cream.

I too only found out recently that UHT stands for "Ultra High Temperature".

Never occurred to me! :)
