mock meat etc

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

mock meat etc

I have done my usual and bought various mock meaty things from Wing Yip without really knowing what to do with them beyond stir fries. I have pork, abalone and (of course) duck - all made from seitan/gluteny stuff.
Any suggestions?
