Christmas cake fruit

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Christmas cake fruit

Hello everyone,

I'm back again with another question about Christmas cake ingredients.

I have an 11 inch tin and thanks to James I found the page for scaling up and down.

My question is can I reduce the amount of fruit as the family don't like it loaded with fruit. Can I put in 1,500 total fruit to Delia's 1,820. The big question is , will it be successful?

Christmas cake

Christmas cakes are usually fruit stuck together with a bit of mixture. You might be better off with say, a Dundee Cake recipe which has a greater proportion of mixture to fruit. There are also recipes for light fruit cakes, too. Though they are better made just before Christmas as they are not long-keepers.
