dark or light soft brown sugar????

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

dark or light soft brown sugar????

Hi! Its my first time making a christmas cake and baking for that matter!! and im kinda confused!! In delias classic christmas cake recipe it asks for soft brown sugar but do i get light brown or dark brown or demerera??!! and whats the difference? also, there seems to be lots of fruit in it, is there more fruit than cake or is that the way its ment to be?? so sorry if the questions are a bit amatuer-ish!!

Another sugar question

Hi,
I would like to ask you, if you know what is the difference between, muscovado sugar and soft brown sugar is there any, as you can get light and dark in both.

Delia's Christmas Cake

YES, Delia's Christmas Cake is definately worth the effort! Amazingly, after more than 40 odd years in the kitchen I made it for the first time last year(long story) we all loved it! only 4 of us but on Boxing day we cut it in half and my daughter and her man took half home with them, it was delicious. My husband took on the task of feeding it weekly and I topped it with bought marzipan and royal icing. I used dark muscavado sugar this year and added a tablespoonful of ginger wine and a little bit of the syrup from a jar of stem ginger and it looks and smells very promising.
