Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Nutmeg

since discovering the absolute wonder of using proper fresh whole nutmeg.

i want to ask a really stupid question.

when is a nutmeg finished with? can you literally grate it to nothing, or do you just grate a certain thickness into the centre?

- do you know what i am trying to ask? i do hope so, lol.

I have gone all the way around one nutmeg, and a bit more.

Nutmeg

The whole thing Sam. OH brings them back still in the shell and I open them as required. Bung in a jar and use for ages.
Did find one half at the back of a cupboard a while ago gave it a quick grate and as it smelt fine used it. Needless to say it did the biz.

Nutmeg.

It ain't a good cheese sauce without a bit of nutmeg in!

As said, you can use it all, I tend to bin it when it gets too small to grate though. I've got a jar with about 12 in so it does not worry me.

I've said before that I am a big user of dried herbs and spices, cannot be bothered with fresh herbs, however, ground nutmeg in a jar = NO POINT!
