Leftovers - Roast Beef

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Leftovers - Roast Beef

i have approx 400-500g of left over roast beef.

anyone have any new ideas for what to do with the leftovers.

Have done, leaving in a tray with excess gravy for a mid week roast dinner.

Have done, wrapping in paper for roast beef sarnies.

Have done, cottage pies.

Have done, chilli con carne - unsuccessfully.

Have done, beef curry - also unsuccessful.

fancied something different to the usual.

All ideas welcome

i am very boring as will more often than not do a salad and jackets with cold beef as we both really like it.
I think that there is a web site called love left overs or something similar. Will come back to this thread later as we are having roast beef this evening

not sure who I'm writing to..but here I go anyway..am new to the site and online stuff in general...after a gap of several years.....
Your query leapt out at me.....it's obvious..... STOVIES! A lovely, thifty Monday night stalwart: roast beef on Sunday and stovies on a monday night in very many Scottish households ( at a certain time in the dim and distant past).
Stovies are really easy;
Large heavy pan
Chop onion(s) and sautee
Place all meat and gravy leftovers in pan,dice into smaller chunks if desired
Add cooked or leftover potatoes (or any other root veg..? perhaps a little modern but why not try it)
Simmer.
The end result is a taste of heaven, a nostalgic kind of heaven. The amount of potato is crucial - too much and it will be a stodgy mess but just enough and you will have a sublime meaty and gravy infused meal! I think stovies get a bad name because often there is too much potato...but you can't beat the homemade variety - especially when the leftover meat is good quality. Gosh, i feel a bit peckish now!!

How about in a Yorkie Pub. as in Sausage Toad? Sliced Beef in tin and just pour batter over the top and cook as normal.

Had a thought [ yes i did have a lie down ] what about doing a stir fry with "strong flavours " and toss some sliced beef in at the end to get some heat as it were

I love cold roast beef, but its also nice in small thin strips as a stir fry with red pepper, onion, etc.etc. and particularly I like it with oyster sauce.

stroganof (sort of!)

I thinly slice beef, red onions, red peppers (optional) and mushrooms (also optional). Fry veg in olive oil and garlic and when soft stir in a tbsp tom puree and 2 tsp paprika. Once coated add a tub of creme fraiche/sour cream and heat thru. add beef and season till hot thru (if it thickens too much add a splash of milk). Serve on a bed of rice or over linguine/tagliatelle.
I also use this recipe for left over roast pork but omitting peppers, tom puree and paprika and adding mustard and fresh/dried herbs (thyme or sage) and serve with mash and roasted apples and steamed cabbage (or something green and crunchy).

Leftovers- Roast Beef

This will only be really good if you roast your beef rare - if it's grey right through to the middle, forget it!

Take a wrap (y'know, one of those tortilla things) and use it like you would a pancake for crispy roast duck - add a slice of cold, rare roast beef, some strips of spring onion and cucumber, a dribble of hoisin sauce, wrap it up and munch. The rarer the beef, the better this is:)

Leftovers? Am I doing something wrong? We have NO leftovers in our house! I would like to think this is because I'm excellent at portion control and buy, prepare and cook the exact amaount we need.... Sadly I think its because we are greedy! :-(

Leftovers - Roast Beef

How about Beef Olives? This is a recipe I have from my late Mum. Very thin slices of cold beef filled with savoury stuffing, rolled and tied with thin string, browned in a little fat then simmered in thick gravy until very hot - serve with veg and mashed potatoes. Haven't cooked this for ages because we rarely have a joint of beef these days but I remember they were very tasty.
