which side of the fish ??

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

which side of the fish ??

i would like to ask as ive forgot it seems being a while since i cooked fish this way ,which side of the fish do you fry first so it doesnt curl up and does this depend on the fish ?

I am not totally sure, but I believe it is skin side down, I seem to remember it being done this way on cookery programmes too.
