Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...
Please help!! I have made Delias mincemeat. I stuck religiously to the recipe instructions and sterilised the jars etc, but despite all that, it is fermenting. Is it safe to use immediately (and freeze my mincepies) or should I throw the lot away. Does anyone know?
Two words - BIN IT!
I'd get further advice before binning it. ?Put it in fridge and see if it stops. Some (Asian, I think) cultures do use fermenting products.
Odd. Never had that happne, and even if recipe says only keeps 2 mths or so I keep mine (in fridge if opened) for a year. I wouldn;t bin it, just heat it up gently and slowly until it comes to boil and then re-pot and see what happens. Is it a suet-free one ? That's what I make (with a basis of stewed apple) and it keeps fine. Its a Nigella recipe. I've also done Delia's and they've all kept fine.
The fridge won't stop the fermentation, only slow it down, so you can't keep it for long, as it will continue to ferment until it blows the lids off the jars. And as well be very doubtful to eat. Cooking in a hot oven will stop the fermentation, but I wonder what it will taste like, as well as the effect on your stomach! Please don't offer me a mince pie, but best of luck. I'm afraid I'd go with John on this one.

Thanks for advice. It was Delias recipe, whom I trust implicitly. However, this is the second year running I have had a problem with this recipe, so I think I will go back to my Mums tried and trusted recipe. Anjiejag.
