Strawberry and cream gateaux

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Strawberry and cream gateaux

Hi I am making some strawberry and cream gateaux. In the middle I was going to put a thin layer of strawberry jam on bottom cake before straws and cream - however I have had an idea>

What about briefly blitzing some strawberries and sugar to use instead of the jam - it would be like a fresh paste - and then straws and cream as usual - what does anyone think?

Would it be soggy or moist??

STRAWBERRY CAKE

Hi Tiglo, nobody has replied to your question so I thought I would give my opinion for what it is Worth. As I like very moist creamy cakes I have often used a layer of pureed fruit such as strawberries, raspberries, peaches under the cream and fruit filling. In my opinion it works very well. If you prefer a drier, firmer cake then stick to the jam. A dash of fruit flavoured liqueur added to the puree also works well. Good luck.
