Frozen sliced aubergines

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Frozen sliced aubergines

As mentioned in "How To Cheat". They were a life saver as I hate frying aubergines for moussaka and useful for stuffed aubergine slices. Asda have discontinued them. Help???

And while we're at it, I have seen frozen artichokes used by another UK cook on the BBC and by an American cook on Food Network. Anyone seen these in the shops? (I know I can buy them in jars as antipasti but I would like to know if they are available in the UK.)

I'm in the Gtr Manchester area if it helps.

You can brush them with oil and cook them in the oven or under the grill.

it does seem that many of the shops that did sell it have discontinued it.

I don't suppose you have an aldi or lidl near you? they may sell them - i don't have either of those near me - well i do lidl, but have never been in.

Other than that you can prepare slices of aubergine, spray/brush some oil over and grill adding herbs and spices if you wish. then allow to cool down completely, add some breadcrumbs/panko to the top, then freeze the slices between greasproof/baking parchment paper, and put in a sealed container or bag.

I forgot to add.

If you have an Italian deli store in your area, that should be where you can find frozen ones.

Or maybe a health food shop.
