Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Asparagus Feuilletes anyone thinking of trying them?
The season for our British asparagus is so short it's good to try out as many different ways to serve it.

Hi Rasdora do you think they would freeze ok of would it be better to just eat the leftover ones cold the next day or maybe reheated . We couldn't eat them all in one day.

Hello again, in my opinion asparagus does not freeze very well. A suggestion would be to make half the quantity. I frequently do this when I know an ingredient will not freeze successfully. I made them for friends and we ate them all!

Thanks for your advice, I shall use half the quantity of pastry and make two large parcels.
Looking forward to trying it , we have a place that grows it just up the road from us so it will be fresh picked that day they also grow strawberries so we are very lucky to be able to buy some of the best foods in the world on our doorstep.

Asparagus recipe

Hi Rasdora I made the asparagus feuilletes for dinner tonight and they were lovely, I liked the Parmesan sprinkled on the pastry. We may have to have them again later in the week to use up the rest of the gruyere cheese .

Asparagus...

I thought I'd throw this in for it's worth. We find wild asparagus in our grounds and along the roadside. It's a lot thinner than the cultivated sort. I tend to use it in omelettes more than other dishes.

Wendy you're lucky to get for free, is it seasonal or all year round?if you could get gruyere cheese you could make the recipe that I've just tried or maybe it would also work with mozzarella.the cat's now off my lap so now back to the ironing:0)

That sounds like a good idea for next year. The wild asparagus is only a short season from about the beginning of March to mid-April so it's all over now. The mushrooming season is short too but I don't know enough about wild mushrooms to risk picking them so I'll just stick to the cultivated ones.

Sometimes when there is a cat on my knee it's an excuse not to do things!
