Dried cranberries

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

I have 4kg of them!

There are only so many cakes and biscuits one can make. Apart from cranberry sauce, does anybody have any suggestions for them (that don't involve meat or fish).

How about an an apple & cranberry chutney.
You can also substitute cranberries for other fruits in your mincemeat.
I add them to cakes , hubby has them in his porridge or yogurt for breakfast.
Cranberry flapjacks .
I make my own muesli, I add a lot of cranberries to the oats .
They are also delicious just as a snack.
Muffins.
Fruit bread.

The list is endless.

Did you look on the ocean spray website?

I'm sure I saw a recipe for roast duck with cranberries somewhere - think 70s throwback to duck with cherries & substitute them. And I like them in stuffing too in place of apricots.

I have porridge for brekkers every morning, will soak some cranberries this evening and try them in tomorrow mornings oats.

I have made cranberry mincemeat before but wasn't keen on it.

Although I love them juiced, or in cakes, flapjacks etc, I'm not mad on them as a snack .... and as I'm trying to stay away from cakes etc, I'm a bit stuck as to how to use so many. Chutney seems a good idea - I'll have an experiment.

I've just put a recipe for cranberry water ice in my profile. I've never made it as I've been unable to get the cranberries until I won some in the forum competition.

It might be a bit like a sorbet.

you said you wanted ideas that didn;t involve meat or fish. Then you wanted to avoid cakes too, lol. Dilemma most of us face.

I was a winner of Craisins, in a recent ocean spray/delia competition.

Others have said they go well in Delias carrot cake (keep meaning to do that).

I used them in my Christmas cake AND puddings.

I added them instead of raisins ina Biryani.

I also made a spotted dick, using the craisins, looks so festive, and tasted nice and moist.

Our delia, has some fantastic recipes for cranberries, which can be changed from fresh to dry.

I bet they would be lovely in home made ice cream too....swirled with some rasberry coulis Mmmmm !!

Soaked some of my Craisins overnight in some brandy and will add them to my mincemeat before making the mince pies later....
