Sumac

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Does anyone on here use sumac in any recipes? I'd quite like to try it but don't know what to put it in.

It is often used in North African and Middle Eastern recipes.

But.............It is one of those ingredients you buy for a specific recipe, and then it sits in your spice hoard for ages and ages.

I'm sure it can be sprinkled on loads of dishes, but sadly I am one of those people who have to follow a recipe and rarely go 'off piste.'

This isn't a very inspired reply but you are better off just googling sumac recipes you will find quite a few . Try as well Ottelenghi recipes . I have done Nigellas fattoush with it and it goes well with chicken , nigella has a nice recipe for zatar chicken with fattoush .

Thanks Gravy. I've had a Google and like the look of those recipe very much. The other day I tried some sprinkled in a gratin topping which also had some herbs added to it. Don't think I was brave enough with the sumac because I could only taste the herbs. Will use it ever so slightly more liberally next time.
