Please help me adapt this recipe . . .

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

What cheeses would you substitute in this recipe for fusspot children? I'm going to put less herbs in too - maybe a scant amount of basil.

Well, the recipe preamble does say you can use any cheese, so long as it amounts to 12 oz.

I think the two pinches (how big?) of cayenne would be more problem for your 'fussy' children.

And, are they likely to go for pepper marmalade? Only you can answer that.

I would be considered pretty old-fashioned nowadays, but I would imagine 'fussy' children might prefer unchallenging food that can be tarted up for adult palates.

I'll go ahead with cheddar for my first try then and keep it as simple as I can . . . and if it's successful I'll sneak some other bits in.
The pepper marmalade sounds delicious and my seven year old will love it so I'll make that too and just waft it near my twins!
