Dried Cranberry Muffins?

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Dried Cranberry Muffins?

I make Muffins for my children and usually use Blueberries.Can cranberries be used and still get that sweet liquid fruit taste with cranberries. Can't they can be quite bitter? If they can be used if I use dried cranberries do they soften like fresh fruit in the bake?

Dried Cranberry Muffins

Hello Kim,

I have used fresh and frozen but not dried cranberries. I think they would work well for the children if you simmered them in some fresh orange juice first and left them to soak up the juice until they are plump.
