Eggs Benedict

This old favourite caught my eye in the Perfect Eggs cooking class and I made it on Sunday for my husband and I, as we'll as our visiting grand-daughter. I had to use Canadian bacon, a ham-like product here in the U.S. What a delicious breakfast! This poaching method is wonderful and Delia's Hollandaise sauce recipe just superb.

Eggs Benedict

I'm so grateful for Delia's website and the new videos only enhance it. I've been a fan since her PBS summer series in the U.S. many years ago, when I purchased the accompanying recipe book at the time, later joining the site in its infancy. Many of Delia's recipes are staples around here, from her Chicken Jambalaya to her Semolina Shortbread to her Lemon Curd, with a whole lot in between. She's a standout in the culinary world.
