What to do with minced chicken?

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

What to do with minced chicken?

I accidentally ordered a pack this week and can't think what to do with it.

I already have some gorgeous Asian style chicken and mushroom croquettes in the freezer, so that's not an option.

What else can I do with the minced chicken? I'm not really into just replacing them for beef in dishes like lasagne...would prefer something where the chicken can make a difference.

All options will be immensely gratefully received. Thanks in advance.

Do you fancy making some sausage rolls? I made some last year using chicken breasts that were minced. They are called Summer sausage rolls and the recipe is on the BBC GoodFood.com site, they were very nice ,made a change from sausagemeat.

Minced chicken in lettuce wraps

I have had lovely minced chicken in lettuce wraps in a Chinese restaurant, I'm sure you could find some receipes if it appealed.

I tend to do Thai meatballs with chicken on pork mince. Nice and moist. Won't put the link up but Coriander chilli chicken meatballs should take you to the all recipes AU site that I got the recipe from.

Yes, love them and make often, Saffy. But as mentioned, I already have Asian Chilli Chicken croquettes in the freezer (made with lots of coriander!)

In the end I made some chilli chicken meatballs last night and served with tomato sauce and pasta. Very tasty, and lots left for the freezer!

Minced Chicken

Buy some filo pastry, or feuilles de brick To your chicken add some ginger, spring onions chopped fine and soy sauce, a little five spice and mix, then make some Samosas. Use water to beush and stick the parcels and if you are on a diet you can just brush with a little butter and bake, rather than deep fry.

you could use to make samosas, with indian spices (recipe in my profile).

meatballs, but you would need to add some fat element, like some streaky bacon, then add dried italian herbs, bit of very finely grated onion and garlic.

chicken burgers, with an assormtnet of flvouring from thai indian italian to plain and simple with just onion, grated courgette and finely chopped dried apricot is nice.

chicken picnic pie is really tasty like a form of pork pie - with added bacon too.

can use it as a wrap around for scotch eggs also, with addition of precook mushrooms and onion (like the duxelle you would do for beef welly boot), or with thai or indian inspired spices and herbs.

you could make a spaghetti, but i wouldn't recommend that well, its a healthy ragu, but we don't like it, lol.

If you make your own fresh pasta, cook it wish some mushrooms and cream, blend and fill your tortellini or ravioli?
