Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

The classic sponge cake in Delia's Cakes contains butter I thought this was a sandwich cake!
Any views?

Not sure what point you are trying to make.

A fat-less sponge like a Swiss Roll is called a fat-less sponge.

Sponges

The term "sponge" is more general now. When I first started baking, a true sponge was fatless and the one with butter in was a Victoria sandwich.

That's jogged my memory, EG. In may family they were called 'Victoria Sponge' and I'm fairly sure that's what the Kenwood cookbook circa early 1960s called it.

Very nice but oh so naughty.
