Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

It is a bit like a souffle but a bit more solid (depending on how long you cook it of course)I have it as a main dish. I sometimes add a bit more cheese and have it with maybe a salad or a jacket potato and baked beans.

cheesy bake with hard boiled eggs and tatties

When I was a kid, my ma used to make a cheesy bake/casserole that included halved hard boiled eggs and potatoes. I think it had a crispy breadcrumbed topping.

For me at the time it was the ultimate comfort food. I have never seen a recipe that seems to fit. Was it an invention of my ma or does anyone have any similar recollections (and ideally recipe sources).
