Braised Lamb with flageolet beans

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Braised Lamb with flageolet beans

I am unable to find lamb neck fillets for this recipe. What would be a good substitute?

Do you have a traditional butcher near you, they will have lamb fillets. It is a good quality cut, so you can substitute a cut of similar quality.

Thx for your reply but I live in Canada and no one has ever heard of lamb neck fillets and what would be a similar quality substitute? Do you think it would be ok to leave the bones in because I will have to de-bone it myself. We have shoulder, leg, loin chops & shanks here. P.s very few people in North America eat lamb.

You may call it something else, but the fillet is the strip of lovely meat along the neck edge of the shoulder. When you carve a shoulder you make sure everybody has a slice if it.

I hope that makes sense. If you buy a fillet separate from the shoulder it will be expensive. A good substitute would probably be a rack of lamb chops; just ask the butcher to bone it out.

Reading your post again, I see you will be boning it yourself. Take your time, and use a sharp knife. Once cooked no one will know if you hacked it about a bit!

Shanks need long slow cooking.

Braised lamb

I have made this many times and used fillets or bought a boned lamb shoulder and cut it into 5 cm chunks.

I think I prefer the shoulder to fillets, but either way it's a lovely dish and looks very appealing with the contrasting colours of the tomatoes and flagelot beans.

If using tinned beans instead of dried just add them about 30 minutes before the end.

Hi Kilmory,
thx for the suggestions. They help a lot. I will be using fresh frozen flagelot beans that I grew in the garden this summer and that I froze so, your point about tinned beans applies to me and I thank you for the tip. I will try the shoulder.
