Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Can anyone tell me how to measure 2 tablespoons of butter as in Delia's hollandaise recipe for asparagus - is it liquid?

Butter

If the butter is solid, just press it into the measuring spoon. Does Delia use measuring spoons now or just any old tablespoon out of the drawer? For ease, use softened butter, that is not straight out of the fridge.

A tablespoon of butter weighs approx half an ounce or 14g.
