FAO SandraK re custard ice cream recipe

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

FAO SandraK re custard ice cream recipe

I plan to make some custard-based ice cream using your recipe Sandra, but wondering if cream should be whipping or heavy or if it even matters. I have heard chefs specify whipping. I have both in the fridge anyway. Thanks for your help.

Hi Janice - actually I'm SonyaK, but I presume you mean me!!
I use 'thickened cream' = an Australian thing, I think.
It's about 35% fat content and is good for whipping but I don't whip it - just straight from the carton.

Cream for Ice cream

My humble apologies Sonya! Thank you for your reply. I think I will try using the whipping cream. I doubt it will really matter but heavy cream here is quite a bit richer and so naturally higher in calories! I will make some tomorrow as it is our 20th wedding anniversary and my OH has been asking if I have made any yet for weeks!! I will let you know the results.
