Mince

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Mince

Got 1lb mince out of the freezer for tomorrows lunch. Any ideas for something different? Don't fancy chilli con carne or spag bol for Sunday lunch or plain old cottage pie.
Brain seized up with the cold so any suggestions welcome!

Depending what kind of mince & how lean, you could make your own burgers with or without the additions of onions, garlic etc - or do them the way we were shown at our Indian cookery class - add 2 tsp ground coriander, 1TBS chopped fresh coriander, half tsp chilli powder, half tsp ground cumin, pinch turmeric, TBS mango chutney, slice white bread soaked in water & squeezed out, 1 egg, S&P. Mix all together & shape into patties - you can test fry a tiny one to check seasoning is right. Can also add a thin slice of fresh tomato tucked inside for variety & fry gently till browned & cooked through. Serve in a bun with extra mango chutney and/or raita to taste.

Mince beef.

well as the meat has been frozen and you have a hefty pile.

I would maybe suggest, as once cooked and unless your feeding an army the dishes can be frozen if you have leftovers or make 2 meals.

meatloaf, timesed 2, once cooked one can be frozen, and recooked in bain marie covered in foil.

meatballs, made with a tom sauce, and or, in an onion gravy akin to faggots.

lasagna.

keema curry.

mince and tatties.

or simply make mince - which you can then freeze in portions for additions in the furture to turn into a chilli, or spag bol or cottage pie or as a topping for a baked potato.

you can also make,
mince beef pies/tarts/cornish pastys.

I miss eating mince there are so many nice recipes using it. I do buy it now and again but just for myself. One of our favourites were meatballs dipped in a batter and deep fried served with spaghetti and a homemade tomato sauce.

Thanks for all your suggestions, the burgers with all the spices sound lovely, will keep that for another day . Hadn't thought of meatloaf, will try that too one day. Have decided on Delias meatballs in goulash sauce (but just using beef mince) have made this several times before and it's scrummy and warming in this cold weather. Will eat some and freeze some.

Never heard of Keema Curry. Looked it up and I can't believe I now have an alternative to bolognaise/shepherd's pie/burgers. Thank you!
