Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Sorry....

About last post, I was trying to override my iPad choice of versus rather than Verjus and sent the post! I'm not a lot of help because I haven't actually used it but I'd think it would be a good substitute for wine. Mind you, I'm not entirely certain I've got the right idea of Verjus, so maybe I'm even less help than I thought!

What's wrong with a lemon then ?!

The juice from immature grapes is not as clean tasting and to my mind a total no go !

It's sold by various wineries over here and is supposed to be a good, gentle substitute for vinegar in salad dressings.
It's used quite a lot by a TV cook here (Maggie Beer) but can't say I've bothered with it myself. Also it's expensive - can buy wine for less!!!
