Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

cream cracker crumbs

I have a box of cream cracker crumbs. I have been loathed to throw them out as they are not stale. Does anybody have any suggestions as to what they can be used for - apart from bird food - taken to the local duck pond - thought there might be something I could do with them.

An Italian restaurant we go to uses Grissini stick crumbs to coat their veal and chicken Milanese. That might work?

In my recipe file I have a hand written copy of this recipe taken from "What's for Lunch, Mum?" dated Nov. '82.
Cracker Flan:- 4oz melted butter and 5oz crumbled cream crackers. Mix and press into pie dish.
On the same page is this:- Cock-a-snook flan filling. Fry 1 chopped onion with 4 rashers chopped bacon & spread over flan case. Beat 2 eggs, pepper, 10fl oz milk & 8oz grated cheese. Pour over then bake at 325F for 45 mins.

Nigella has a good recipe for chicken nuggets using bashed up Ritz crackers. The chicken is soaked in buttermilk over night to make it really soft. Works a treat.

I agree, Gravy. That Nigella chicken recipe is totally marvellous.

The chicken comes out so tender and moist, its so good.
