Creole Christmas cake - gluten and dairy free

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Creole Christmas cake - gluten and dairy free

I make this cake every year, very successfully but I use no dairy or gluten. I do this by substituting butter with Vitalite dairy free margarine and substituting SR flour with Dove Farms gluten free SR flour. I do not alter anything else. I regularly use Delia's recipes and always substitute flour and butter with the above alternatives - no failures yet!!

GF and dairy free cake

Well done, it is well worth experimenting and I do find that most cake recipes adapt well. I too use Doves Farm gluten free flours and they work great. I also use them for my own pastry too with the addition of xantham gum so I dont have to miss out on Delia's sausage rolls at Christmas (made with gf sausages.)
