I purchased a new freezer earlier this year, prior to this I only had a smallish freezer section incorporated into my fridge. My friend/neighbour June, kindly allocated me a drawer in one of her freezers which was really handy especially at Christmas. It occured to me last weekend that I may still have something in June's freezer, so I ambled over and low and behold, lurking in "my" drawer were a dozen homemade mince pies, half a homemade stollen, 2 tubs of red wine and a tub of white wine, all left over from last christmas.Oz, my sweet toothed fiance, was very pleased and demolished the pies and stollen faster than you could say father christmas.Note to myself, take a leaf out of Dolly's book and make a list of contents of freezer. LOLxx
I have just added sausages, lamb steaks and chicken breasts to my list ....it's sooo useful to have and only wish I had made one ages ago....x

..I will probably make my stollen this weekend and freeze it. Oz also loves Pannetone, and this is one item that I usually buy, but I am contemplating on having a go at making my own this year.I will make and freeze my mince pies a little nearer to Christmas, nobody likes Christmas pudding, but I will be making baklava and fig rolls for Oz and my Mum's favourite Whisky Dundee Cake from Delias previous Cristmas book.I also make some lighter desserts, a favourite being very simple but a nice change from all the rich offerings.Line ramekins with homemade swiss roll and fill with your favourite ice cream and finish with swiss roll. This is nice served with fresh fruit appropriate to the flavour of the ice cream. Even though it is simple, it looks really nice when served. I make a variation too, where I half fill with ice cream and then pop in a "treat" such as an M&S chocolate cherry liquer and then the ice cream and swiss roll. You could of course use any small sweet of your choice such as a Munchie or Malteser, in fact the variations are endless and if you have several in the freezer they make an instant dessert when needed.Cor, Dolly, I have rambled a bit havn't I? xx

As you say, you need something very simple at Christmas and these sound an excellent idea. Mind you, not sure my homemade swiss roll is rolled tightly enough to fit a ramekin. Perhaps I will need to cheat and buy a good quality one from M & S or something. A good standby for me.Speaking of light desserts... I'm going to try the Little Mincemeat Souffle Puddings in Delia's new book at some point this Christmas. They can be made in advance and apparently they even freeze well... so hope to get some in the freezer. They're also in little ramekins and ;o) will stop me pigging out ! Ramekins are perfect portion control for me!!Honey :-x

Got a pooter back so I'll be speedy afore it goes again.Great idea keeping a list of what's in the freezer, BUT, I don't keep the list up to date :0( What is the secret?How can I make sure we put labels on the freezer boxes as well; OH and me are both guilty of this one. It has made for some interesting meals of late :0)
Oh Biggs, join the club. I always think I will recognise what it is, but never do, and you can't smell it either. I've seen me have to defrost it first so that I know what I'm going to put with it... pasta, rice, potatoes. I bought my labels from Lakeland (on a roll) and now keep them with the boxes I use and so I SEE the labels when I get out the boxes or bags.With regard to keeping the list up to date... I just don't ! I'm hopeless. But, every time I sort out my freezer, I do one and it's soooo useful, just for a few weeks ! Well worth the exercise if only for a short while.Honey :-x
Sue, I love baklava too....I just write on my freezer bags with a black marker pen from lakeland and no probs....and each time I take out or add an item, I just amend my list on pooter...x
