Summer collection!

Am making the Chicken Basque and strawberry Granita today from Delia's summer collection. I love the summer and winter collections, they are still well used. Do you?

All the time !!

I use the summer and winter collections all the time along with Delia's other books. I just wish both of the TV series' were available on DVD. The dvd of Delia's complete collection is not quite the same.

Summer Collection


I love that book, but i have to fess up, Winter is my most favourite book - and my original complete collection, all 3 are very dog earred and splattered and very torn and cellotaped up dust covers.

Strawberry Granita, and the real lemonade are often made.

nothing beats the classics does it xx

Summer collection must make

I love the halloumi cheese starter with the gorgeous lime garlic caper and coriander dressing. It is much in demand when people come round. In fact one of my friends has to have it every time he comes for a meal!

Summer Collection

The Summer Collection is my all-time favourite recipe book, I cannot think of any I do not like. But my absolute favourite has to be the Pesto Rice Salad, the family still insist I make this for any buffet.

My copy is dated 1994 and I love and use again and again most of the recipes but my favourite is Piedmont Roasted Peppers. I have all Delia's books but LONG for a DVD.

Summer food

The favourites in our house are the roast vegetable couscous salad with the Hariisa-style dressing and terrine of summer fruits.

What I like most about this two dishes is that the roast vegetables and terrine can be made in advance and couscous only takes a couple of minutes and they look impressive and colourful when put on the the table.

Terrine of Summer Fruits is the one recipe I have made most of from the Summer Collection, followed by Pesto Rice Salad....

Summer Collection

So hard to choose. Top three would be Salmon with a Saffron Cous-cous crust with the tomato and olive Vinaigrette, Oven roasted potatoes with garlic and rosemary and Chicken with Sherry Vinegar and Tarragon Sauce. All requested and cooked so many times.

The Terrine of Summer Fruits is really easy to make, and looks impressive when it is turned out. I serve it Vanilla Cream Terrine

i will have to try it!

I wish it was easier to get black or red currants here.

I plan eventually to grow my own.

I do get awesomely good morello cherries from Trader Joe's (owned by Aldi).

Terrine of Summer Fruits

Yes, this definitely has the 'wow' factor and is unbelievably easy to make. Any combination of summer berries looks good and blueberries work well if black and redcurrants aren't available.

Now our rhubarb crop has finished, I am currently using homegrown fruit to make Gooseberry Yoghurt Fool - delicious with ice cream or creme fraiche.
