Welsh Rabbit is posh cheese on toast! So what's Welsh? Even the cheese is traditional cheddar (from somerset) And where is the rabbit?! : )

Welsh Rarebit

Just spotted this question! The correct name is Welsh Rarebit. I'd have to google to see where the Rarebit came from, but that's what it is! I imagine it was originally made with Welsh cheese and of course it's a bit more than just cheese. It can be mixed with egg yolks, (the cheese grated), mustard powder, Worcester sauce, a little four - or the cheese can be mixed with a b&"233;chamel sauce.

There is a place in the City of London called Simpsons Tavern - a famous centuries old little tavern down an alleyway. On their menu for years has been Stewed Cheese - delicious, and served in a little pan which you pour over your toast.

Gosh - feeling peckish!!!!

Stewed Cheese

I'm sure there are better names to call it but I do like the idea of pouring it over toast - bit like fondue in reverse!
