Don't you just love Anastasia for her preserving recipes.

She is THE preserves queen.

Pickled Onions

I think Anastasia should write a book! All that knowledge and lovely recipes for Jams, chutneys and preserving. I would buy it! I loved my little adventure into jam making and sloe gin (which I can't wait to taste!) it was really good fun, easier than I thought with good, clear instruction and inclusive! With big and little helpers. : )

Thanks you.

Thanks Ladies for the compliments.
When I was a little girl we were very poor , so poor that everything that could be foraged & preserved was done by my Nan , & my Mum.i learned from a very early age how to pickle , preserve , bake , make butter , & cheese also make a Meal out of nothing .
This was all done with never a cookery book in site or a pair of scales .
To this day possibly 90% of my cooking is done without a cookery book & without scales .
I am ok as long as my memory don't fail me .!!!
I just wondered if anyone else on here cooks in an old fashioned way like I do.

Anastasia, my Mum never used scales either, just spoonfuls. (not sure what size) but all our meals were wholesome and delicious. I never really follow a recipe to the letter, (although I do use scales) except for the delicate ones. I always think they are a guide to tweet as you would like. But have to say that to start off with Delia's are always a good start ;)

Scales.

I measure by sight when I bake anything, even my Christmas cakes .
I am 66 so have had years of practise .
A pair of scales when I was growing up would have been a total luxury.
I do have very old pair of Avery kitchen scales with imperial & metric weights , more decorative than anything else.
I use just 2 different sizes of spoons , & one mug for measuring.
