Caribbean Courgette Cake

I adapted this from a recipe given to me by Jools from her Nanny's Courgette Cake to transform it into this wonderfully moist ginger cake.....very much like you would buy from the shops.
A great way to use up those courgettes, multiplying as we speak in the garden.
It does improve if you leave it a couple of days, and goes that lovely sticky texture on top....that is if it lasts that long !!
Gorgeous as a pudding with custard, or with a spread of butter and a cup of tea... Yummy x

Sounds lovely Yummy. Vegetables don't really grow well in our garden, although I suppose we could try grow bags. We are usually quite succesful with fruit and have an abundance of apples this year. We never have a problem eating those up though!

Cake mmmmm

Sounds lovely & want to give this a go - but just remind me -because I am not as intuitive with cup measurement the way I am with ounces or g - what weight or liquid measure is a cup for your recipe please?

I remember at the time I didn't have cup measures either so I just used a tea cup. I've just gone and measured the "official"
cup measure and it holds 200ml of liquid so if you work on that principal and measure that in one of your cups then you won't go far wrong....good luck xx

I was wondering the same thing, WCookie!!
Thought maybe 250ml was just an Aussie cup, but I gather it's the same in UK.
