Pickled onions

Any jar is fine for pickling as long as it is sterilised & has either a good fitting lid , or the paper covers that you buy in the shops.
You can use any sugar , my last lot were done with Demerara , & they were just so delicious.
That was the first time I had tried Demerara , & for me it worked well.
I also use honey sometimes if I have a glut.i am a key holder for about 8 houses , & my present for looking after a house or feeding a cat is always a jar of honey.
It is very difficult for people to find a present to bring back , this works well for me.

Shallots are due to be in the shops soon , they will be a cheaper price than they are at the moment.
I also use the sweet vinegar for beetroot , so delicious .

Pickling onions

You are more likely to find pickling onions by the pound/kilo at independent greengrocers, rather than supermarkets. Indeed, many sell them in variously sized sacks.
