Hot weather food

It's a scorcher here in Ireland today, so have sent the husband out to get the makings for gazpacho - nothing hits the spot on a hot day quite like a chilled garlicky soup :) Going grocery shopping tomorrow, and I think steaks are required, but can't really think what else to get. What's your favourite hot weather food? Looks like we're in for a week or so of it, so I need inspiration!

Salad and more salad.
Green salad, rice salad with sliced raw mushrooms, peas, etc. Prawns, Coronation chicken, smoked mackerel. There are endless different salads that can be made up quickly to accompany anything you like.
As for me on this very hot day, I'm being rather stupid and making a beef and bacon pie for a special dinner tonight - our anniversary!

Oh Happy Anniversary! And prawns, I'd forgotten all about prawns, and seared tuna steaks, and fried halloumi with olives! Currently cooking some chicken thighs, rubbed with smoked paprika and squirted with lemon juice - just for something to have with a big green salad (and the gazpacho). Thanks for the inspiration :)

Barbecue for us tonight. Some delish Cornish Sardines will be thrown on and some fishy kebabs. Quick and easy!

Scorchio (sp) also here today. Poached Salmon with Prawns, New Pots and Salad come to mind with a lovely chilled white wine, followed by Strawberries & pouring cream. In fact this is what we are having this evening.

How hot does it have to be before you guys classify it as a 'scorcher'?
Just interested to know. But good to hear you're finally having some summer weather!
I was over in England in early May and it was cold and wet!! We were pleased to leave for Greece and Turkey for a few weeks!

It is really lovely and warm here at the moment - 25C today and the weekend was up to 29C.

Hot weather food - any thing grilled, lots of things like cous cous, or pea salads with pancetta and feta, anything with fresh green herbs like coriander or basil. Pavlovas and fools - all super yummy! x

home made ice lolly's.

salad, with new potatoes, with either boiled egg, ham, cheese, cold chicken. fav salad is caesar salad.

mix roasted veg pasta's allowed to cool down.

picnic pies and scotch eggs.

quiches.

i have done a couple of marinades for various meats and sausgaes for the bbq. but that has been really hot work.

down souf.. we have had several days of very high 20c's....even eating is a bit hard work, let alone cooking.

i would love to try a gazpacho - but cold soup doesn't equate in my head, i would not dare sucuumb my OH to a cold soup, i know the face and the look and the comments that would follow, lol.

Has to be icy chilled soup - there are lots - Vichysoise (spelling?) Watercress, Delia's summer soup recipe - to name a few. Salads of course - bbqs - however, tonight I am cooking chicken curry! Well it did originate in a hot country to keep people cool.

Scorching here too. I love Delia's gazpacho from the Summer collection, plus the Piedmont peppers with lots of baguette. Beef marinating for tonight on the bbq. Salads rule - oh and Delia's lemonade. Chillie
