Exploding Home-Made Rhubarb Chutney

It's not funny really but I couldn't help smiling. In today's newspaper there was an article on a lady's refrigerator door being blown off and the frig damaged at the back. The shock wave lifted the ceiling, cracked walls, sent shards of glass flying and blasted the casing off an extractor fan. Apparently she stored some home-made Rhubarb Chutney that she had been given, in a dish uncovered. It had been left in the frig for 12 hours without the door being opened. Apparently because it was uncovered in the frig and was made without the chemical preservatives used in mass-produced varieties, after five days it began to ferment and give off methane gas which, when mixed with air, made the explosion. Not sure if Noreen will allow the following recipe which was given in the newspaper but she can delete it if necessary.
Preparation time - 10 minutes
Cooking time - 1 hour
Makes 6 jars.
2 lb (900g) rhubarb, 2 lb (900g) sugar. 1 lb (450g) sultanas, 1 pint f vinegar, 1 oz (25g) salt, 1 oz (25g) powdered ginger, one finely chopped onion, half a teaspoon of Cayenne pepper and half a teaspoon of ordinary pepper.
Put all the ingredients in a pan and bring to the boil before reducing the heat. Let it simmer untl thick and dark brown, while stirring the mixture now and then. Pour the chutney into clean, steriled jars and store with lids on.

Not sure if I want to replicate that Dot :) I wonder how she explained it on the insurance form ? ha ha ha !!
