Cooking Dairy and gluten free!!

I thought I would share with you the challenge I set myself this year at our annual open gardens day in the village. I had already been baking gluten free cakes for several years for the tea tent and they were received very well. We have several coeliac sufferers in the village and they were delighted. Well, imagine my horror when I found that I had to go dairy free due to an intolerance which unbeknown to me had been causing me IBS for years!! What a challenge I now had. To bake both dairy and gluten free! Who do I turn to but to Delia.

Studying her sponge recipes I realised that if I replaced her margarine with Pure soya margarine, self raising flour with gluten free flour and gluten free baking powder I could do the "all in one" method. With trepidation I cooked, cooled, jammed and iced (although the cakes did "lift" their lids a bit as the tops of the cooked sponges started to peel away - why I don't know) but I quickly covered the top with icing and all was well. The taste? Brilliant. They are better cooked and eaten within 24 hours but at a tea tent on a warm day with the sun shining there were no leftovers!!!

Next year, dairy, gluten and egg free?????

Well done Katrina! Am really pleased your efforts have paid off! Cakes do work well gluten free in general, I have Delia's Cakes book and have been really pleased with the results.

Many thanks Gravy Queen for your kind words - we managed to raise a lot of money for charity that day and every cake did its part!!

After several months of being dairy free and taking time to read every label in the supermarket it has certainly raised my knowledge of the rubbish that is in processed food and the surprising ingredient of milk and milk products that are in them (even things you wouldn't think would have milk in it!) I certainly feel better for keeping to a more natural diet and Delia's books (of which I have many!) keep me fed, fit and slim!! Even her lovely cakes are not, in themselves, "naughty" it's that second slice that does the damage!!!
