were do I start!! everytime i make this its a disater!! my cousin makes the most lovely buttercream cupcakes she pipes buttercream roses on each cake they are beautiful!and taste divine almost like cream!! mine however are not! i have a lovely kenwood mixer and yet the buttercream is either runny or lumpy!! i have perfected the roses but I will own and say I had to buy the betty crocker vanilla icing which is lovely may I say but a tad expensive when you have a large cake to cover! what am I doing wrong! I cream soften butter then add my sieved icing sugar! starts out ok but as my mixer starts to mix it starts to go runny and when I add more sugar it goes worse!!!

Are you using your cousin's recipe for the buttercream? she might be using something like stork to make it and that's maybe her secret.
Or it could be using a mixer that is the problem, does the butter get too soft and then maybe turn a bit oily.
Most of my buttercreams are made with stork.

French Buttercream?

Couldn 't you ask your cousin which buttercream she uses? It may be a French or Mousseline Frosting that uses egg yolks or whites in the make up.

hi! thanks for replying she says she uses butter hand mixes it first then finishs off with the mixer! I think the reason why its so yummy is the butter and its almost white! she says she can't understand were I am going wrong!!! ditto!

hi thanks for replying she says she just uses butter and icing sugar and does not add milk!!! basic really but they are so nice!!
